Bread Recipes Wanted!

Okeydoke- so I want EVERYONE to post their favorite bread recipe! PLEEEEEAAAASSSSE!

  2. This is a good roll recipe.


    Molly's Rolls

    1 cup warm water
    1 cup warm milk (I just heat it in the microwave for 30 seconds and let it sit while the yeast bubbled)
    1/3 cup sugar
    1 package yeast(2 1/4 teaspoon)
    1/3 cup oil
    1/2 T salt
    1 egg
    flour (I think I ended up use 4 1/2 cups)
    In mixer combine yeast, sugar, and warm water; let grow until bubbly(about 5 minutes). Add milk and mix. Mix in oil and egg. Slowly add 2 cups flour, mix and then add salt. Add 1/2 cup flour at a time until it comes away from side of bowl. Let rise in mixing bowl for about 30 minutes. Form rolls as desired and place on a greased cookie sheet. Let rise and additional 30 minutes. Bake at 400 degrees for 10-12 minutes. Brush hot rolls with melted butter. I made 2 dozen with this recipe.

  3. Breadsticks

    (btw: the comments aren't mine, but are helpful so I left them.)


    Ingredients:
    1 ½ cup warm water
    1 Tablespoon yeast
    2 Tablespoons sugar
    3 ½ cup flour
    ½ tsp salt
    Butter for pan
    Directions:
    Dissolve yeast in warm water. Add sugar and let it sit and bubble for a few minutes. Add the salt and flour. Knead for 3 minutes. Let the dough rest for 10 minutes. (I do all of this in my Bosch--any mixer would work great) Melt 3-4 Tbsp of butter and pour most of it onto a cookie sheet. Roll dough to cover cookie sheet. Cut to desired width, then twist or lay flat on cookie sheet. Brush remainder of butter on breadsticks and sprinkle with garlic salt, parmesan cheese, and parsley (or whatever seasonings you like). Raise for 10-20 minutes. Preheat your oven to 375 and bake for 20 minutes, or until golden. You can roll them out to fit a cookie sheet and they will be pufffy and soft. If you prefer a thinner, crunchy breadstick roll them out to fit a cookie sheet and a jelly roll pan. Either way they are great!
    The Results:
    These were super good and super easy. I got the recipe from http://sisterscafe.blogspot.com/search/label/bread. I sprinkled garlic salt and parmesan on my breadsticks and only cooked mine for 17 minutes. I would suggest only cooking them till they are golden brown. These were tasty little breadsticks with my spaghetti.

  4. Bagels ****these are SOOOOO good!!

    Ingredients
    1 1/2 cups water
    2 packages yeast
    3T sugar
    1T salt
    3 1/2 cups bread flour
    2 quarts water, to boil
    1 egg white
    cinnamon (optional)
    raisins (optional)
    poppy seed (optional)
    dried onions or garlic (optional)
    sesame seed (Optional)

    Directions
    1 Mix yeast, sugar and warm water together and let stand 3 minutes.
    2 Mix 2 cups of flour with the salt in a large bowl and add the yeast mixture.
    3 Stir until combined and slowly mix in the rest of the flour (If making cinnamon raisin bagels, add these to dough now).
    4 Knead on a floured surface for 5 minutes, adding additional flour if needed, dough should be firm.
    5 Place dough in a greased bowl, cover and let rise until double.
    6 After rising punch down and divide dough into 12 balls.
    7 Allow to rest for 4 minutes.
    8 Bring 2 quarts of water to boil.
    9 With your thumb, make a hole in each ball of dough and pull open about 2 inches, making a bagel shape.
    10 Preheat oven to 350 degrees.
    11 Place the shaped dough onto a cookie sheet and cover for 10 minutes.
    12 Lower heat under water for it to be simmering.
    13 Drop 2 or 3 bagels at a time into the water for about 45 seconds, turning each once.
    14 Drain and place on greased baking sheets.
    15 Brush tops with beaten egg white and top with optional toppings.
    16 Bake for 35 minutes, turning once for even browning.
    17 Bagels are done when they are golden brown and shiny.

  5. Handmade Soft Pretzels YUMMY!!

    Ingredients
    1 1/2 cups warm (110 to 115 degrees F) water
    1 tablespoon sugar
    2 teaspoons kosher salt
    1 package active dry yeast
    22 ounces all-purpose flour, approximately 4 1/2 cups
    2 ounces unsalted butter, melted
    Vegetable oil, for pan
    10 cups water
    2/3 cup baking soda
    1 large egg yolk beaten with 1 tablespoon water
    Pretzel salt
    Directions
    Combine the water, sugar and kosher salt in the bowl of a stand mixer and sprinkle the yeast on top. Allow to sit for 5 minutes or until the mixture begins to foam. Add the flour and butter and, using a spatula, mix until well combined. Continue kneading for about 10 minutes, or until dough is smooth and elastic. Remove the dough from the bowl, clean the bowl and then oil it well with vegetable oil. Return the dough to the bowl, cover with plastic wrap and sit in a warm place for approximately 50 to 55 minutes or until the dough has doubled in size.
    Preheat the oven to 450 degrees F. Line 2 half-sheet pans with parchment paper and lightly brush with the vegetable oil. Set aside.
    Bring the 10 cups of water and the baking soda to a rolling boil in an 8-quart saucepan or roasting pan.
    In the meantime, turn the dough out onto a slightly oiled work surface and divide into 8 equal pieces. Roll out each piece of dough into a 24-inch rope. Make a U-shape with the rope, holding the ends of the rope, cross them over each other and press onto the bottom of the U in order to form the shape of a pretzel. Place onto the parchment-lined half sheet pan.
    Place the pretzels into the boiling water, 1 by 1, for 30 seconds. Remove them from the water using a large flat spatula. Return to the half sheet pan, brush the top of each pretzel with the beaten egg yolk and water mixture and sprinkle with the pretzel salt. Bake until dark golden brown in color, approximately 12 to 14 minutes. Transfer to a cooling rack for at least 5 minutes before serving.

  7. BREAD This is my go to recipe!

    5-6 C Bread flour or wheat flour or combination of the two. Just add wheat flour first.
    2 1/2 C warm water
    1/8 C oil
    1/3 C honey
    1 T dough enhancer
    1 T vital wheat gluten
    1/2 T salt
    1 T SAF yeast

    In kitchenaid mix water, honey, oil, dough enhancer, gluten, salt and half the flour. Mix on low speed. ( I just do it by hand)
    Add yeast and rest of flour until it's cleaning the sides of the bowl. Let it kneed on low speed for 5 more minutes. Cover and let rise until doubled. Divide in half and shape into loaves. Put into 2 well greased bread pans. Cover and let rise until doubled. Bake 350 for 25-30 minutes. Butter tops while still warm.
